¡OLE! Feliz Cinco De Mayo!!

Feliz Cinco De Mayo mis amigas!!

I was going to write this entire post in espanol, but I decided I wouldn't torture you all with my pathetic language skills.  Hope everyone is having a lovely Cinco De Mayo.  Mexican is my FAVORITE type of food, so I love a good excuse to have an awesome Mexican dinner.

Babbling Brooke's Gorgeous Guacamole

I LOVE Guacamole sooo much.  During the summer, I like to whip up a bowl of guac to start off dinner.  This is my recipe:

4-5 ripe (dark skin, gives slightly to the touch - but not mushy)

2 firm Roma tomatoes (you can add more!)

1 pinch salt

1 pinch chile powder

1/4 cup loosely packed roughly chopped fresh cilantro

1/8 tsp chopped garlic

1/8 tsp lime juice

Mash up the avocados or beat them with a stand mixer (for very smooth guac).  Stir in tomatoes, salt, chili powder, cilantro, garlic, and lime juice.  Add additional salt to taste (this MAKES the gauc - you need salt!).  Enjoy with wholegrain or authentic tortilla chips (none of that Tostitos junk!) or as a topping for burritos, chili, tacos, tortilla soup, and more!  Have a margarita too!

For my nails today, I went totally colorful (and found this fun folder that matched as a background!).  These are all shades from Zoya's new Flash Collection, which I will be showing you guys soon.  I LOVE how bright and fun these colors are, so I thought they would be perfect for Cinco De Mayo.
